Description
Old Tom edition is a rich complex gin with light sweetness. More intensely botanical than other gins this Old tom is great neat over ice or as part of either a long drink or a cocktail. The origin of ‘Old Tom’ dates back to the 18th Century when unlicensed gin sales were illegal. Gin production was driven underground and to purchase gin you would look for buildings with a wooden plaque of a black cat. You would put your money through a slot and in return receive a shot of gin.
Using the usual suspects of juniper, coriander, lemon and orange combined with pink peppercorn, fresh ginger and honey produced in Darlington by local beekeepers. The gin is distilled and then set to age for 4 weeks in an oak barrel where it picks up more vanilla notes from the oak.
