Using the usual suspects of juniper, coriander, lemon and orange combined with pink peppercorn, fresh ginger and honey produced in Darlington by local beekeepers. The gin is distilled and then set to age for 4 weeks in an oak barrel where it picks up more vanilla notes from the oak additional local honey is added to the barrel to add a light sweetness to the gin which cuts through the spice from the ginger and the pink peppercorns.
